About this category
The oven is the most hands-off tool in a keto kitchen. Once a dish is in, you mostly wait, which frees you up for a side salad or cleaning up. This category covers everything from slow roasts like lamb shank with rosemary, garlic and red wine to quick bakes like egg muffins with bacon and cheddar, plus a long list of cakes, cookies and breads.
Dry oven heat is great at browning, and browning replaces a lot of what breading and glazes do in regular cooking. Kohlrabi fries or celeriac fries turn crisp on the outside without any flour. Cabbage lasagna with ground beef shows how vegetables can stand in for pasta sheets, and a New York style cheesecake proves the oven works for keto desserts too.
A few habits help. Use the convection setting for vegetable fries and lower the temperature slightly compared to a conventional setting. Line trays with parchment, since cheese and almond flour doughs stick easily. Keep an eye on almond flour bakes near the end; they brown faster than wheat-based ones and may need a sheet of foil on top. Casseroles reheat well, so baking a full dish often covers several meals.
