Keto Flaxseed Rolls Without Cheese
These keto flaxseed rolls manage without mozzarella and without cream cheese - unlike most low carb rolls, which are built on melted cheese. Ground flaxseed makes up the bulk, psyllium husk powder holds it together, and the dough swells within ten minutes to the point where it can be shaped.
The key facts at a glance
- Time required: approx. 65 minutes, approx. 20 of them active work.
- Only approx. 1.4 g net carbs and 20 g fat per roll.
- Ingredients: ground flaxseed, almond flour, psyllium husk powder, sunflower seeds, eggs, cider vinegar, sesame.
- Suits anyone looking for a dairy-free keto roll - and they freeze well.
Ingredients
Makes 8 rolls of approx. 80 g - two of them with a topping are a complete meal.

How it is made
Mix all the dry ingredients, add the eggs, cider vinegar and hot water and let the dough swell for ten minutes. Shape eight rolls with damp hands, scatter with sesame and bake at 180 degrees Celsius for about 45 minutes.
Why these rolls suit keto well
A normal wheat roll of 50 g brings about 30 g carbs with it - two of them blow any strict keto daily budget before anything is even spread on top. Here ground flaxseed makes up the bulk, and flaxseed is a special case among seeds: of about 29 g carbs per 100 g, around 27 g is fiber that does not count towards the net figure. Just under 2 g remains. Almond flour supplies structure and a mild flavor, and the sunflower seeds the bite. Per roll that leaves approx. 1.4 g net carbs, 20 g fat and 10 g protein. The second advantage is satiety: 245 kcal with ten grams of protein and a high fiber share keeps you going considerably longer than a wheat roll of similar calories that is almost nothing but starch.

Why the flaxseed has to be ground
Whole flaxseeds pass through the digestive tract largely unchanged - their hard shell is rarely broken by chewing. They are additionally unsuitable for the dough, because they take up no water and so the dough will not bind. Ground, they release mucilage that together with the psyllium husk powder forms the scaffold gluten would otherwise provide. Ground flaxseed does go rancid quickly, though, because its polyunsaturated fatty acids are now exposed: bought ground flaxseed belongs in the fridge and should be used up within a few weeks. If you own a mill, grind it right before baking instead.
Without a cheese base - what that changes
The widespread low carb rolls work with melted mozzarella as the glue. That works, but it makes the roll salty, cheesy and useless for anyone avoiding dairy. Here 15 g of psyllium husk powder takes over that role. The price is a firmer, denser crumb - what you get is not a fluffy white roll but a hearty one in the manner of a dark wholegrain roll. If you prefer it softer, replace 50 ml of the hot water with the same amount of cream; it is then no longer dairy-free, though.
How do I serve and vary the rolls?
Warm with butter, classically with cheese and ham, or split as the base for a breakfast egg. In practice it pays to let the rolls cool completely before cutting them - straight from the oven the crumb is sticky from the moisture still bound in it and seems raw even though it is baked through. Two hours later the very same roll is light.
Meal prep, prepping ahead and storing
In a bread bin the rolls keep for about 4 days, in the fridge around a week. They freeze very well: freeze them split, and the halves can go straight from frozen into the toaster. That is the practical advantage over cheese-based rolls, which quickly turn tough after thawing. I always bake a double batch and freeze half straight away.
Variation without almond flour
For a nut-free version the 100 g of almond flour is replaced by 60 g of sunflower seed flour - the quantity is lower, because it binds more liquid. The dough then needs about 30 ml of extra water. One known side effect: sunflower seeds react with baking powder to produce a greenish tint in the crumb. It is harmless but surprising the first time.
Which tips help with keto flaxseed rolls?
- Add the water genuinely hot - cold water barely makes the psyllium husks swell.
- Keep to the ten minutes of swelling time, or the dough spreads out on the tray.
- Dampen your hands while shaping and the dough will not stick.
- Shape the rolls slightly flatter than you want them - they rise only a little.
- Test with a wooden skewer after 45 minutes; if dough clings to it, bake for another 5 minutes.
- Let them cool completely before cutting them open.

FAQ
Why are my keto rolls sticky inside?
Almost always because they were cut too early. Psyllium husks release their bound moisture only as the rolls cool; hot, the crumb therefore seems raw. Two hours on a rack solves the problem. If it stays sticky, there were too few minutes of baking or too much water.
Can I use whole psyllium husks instead of the powder?
Yes, but then about 20 g instead of 15 g, because whole husks are less dense. The crumb turns out somewhat coarser. What matters is not using more than stated - too much makes the roll rubbery.
Are flaxseed rolls suitable for weight loss?
At approx. 1.4 g net carbs they will not disturb ketosis, and the high fiber share is filling. At 245 kcal each, though, they are not a snack on the side: two rolls with a topping are a complete meal.
How much flaxseed a day makes sense?
One roll contains just under 19 g of ground flaxseed. The German Federal Institute for Risk Assessment recommends not going much beyond about 15 g of flaxseed per meal because of the cyanogenic glycosides it contains; with two rolls eaten some hours apart you stay in an unremarkable range. If you regularly eat larger amounts, spread them across the day.
