About this category

Slow cooking turns tough, flavorful cuts into tender meals with very little active work. You brown, chop and load the pot, then let low heat take over for several hours. The keto version simply leaves out the potatoes, flour-thickened gravies and sugary glazes, and lets collagen, cream or vegetables thicken the sauce instead.

Many of the recipes here come from hearty European cooking. Braised ox cheek with celeriac puree, coq au vin with bacon and mushrooms and Szegedin goulash with sauerkraut all benefit from long cooking. For something spicier, chipotle pulled pork works well in a bowl, and lamb curry with coconut milk and spinach brings in a different set of flavors.

Searing the meat before it goes into the pot builds a deeper flavor, although it is not strictly necessary. Fattier cuts like shoulder, cheek and short ribs stay juicy over long cooking, while lean cuts can dry out. Keep the lid closed, since each peek lets heat escape. Most braises taste even better the next day and freeze well in portions, making this category a strong fit for batch cooking.
