How it is made
The lamb shoulder is studded with garlic and marinated in lemon juice, olive oil and oregano - ideally overnight. It then goes with kohlrabi wedges and cherry tomatoes into a generous parchment parcel and braises for 3 hours at 160 degrees Celsius. The feta cheese joins the opened parcel for the final half hour.
Why kleftiko is almost keto by itself

Why kohlrabi instead of potatoes?
Kohlrabi is the most shape-stable keto vegetable for long braises: it survives three hours in the parcel, soaks up the lemon and lamb juices like the potato in the original, and at approx. 2.6 g net carbs per 100 g has only a fraction of their carbs. Rutabaga works just as well as an alternative.
Does kleftiko work with a leg of lamb or boneless?
Yes. Boned shoulder (900 g then) cooks a little faster and is easier to portion; the leg is leaner and should be marinated with 2 tbsp more olive oil for the keto arithmetic. The bone does bring noticeable flavor to the juices, though - braise it bone-in if you can.
Do I need a braising pot or is the parcel enough?
The parcel takes over the role of the braising pot completely, as long as it is sealed. To be extra safe, set the parcel into a covered roasting dish as well - double is better, though it changes little in the result.
