This keto onion soup follows the French original but replaces the toasted slice of baguette with a gruyere topping. The decisive factor is the quantity of onion: it is deliberately limited to around 75 g per serving, because onions are the most carb-heavy element in the soup. In return, slowly caramelized onions, butter and cream provide the depth the bread would otherwise have to supply.

How it is made

With the cheese, bear in mind that gruyere is made with animal rennet - if you want to avoid that, reach for an alpine cheese made with microbial rennet.

FAQ

Are onions allowed on keto at all?

In moderation, yes. Onions supply 6 to 8 g digestible carbs per 100 g, which puts them among the more carb-heavy vegetables. As an aromatic base in limited quantities they are unproblematic; as a main ingredient in large quantities they are not. Here it is deliberately only approx. 75 g per serving.

Can I replace the gruyere with another cheese?

Yes. Alpine cheese, emmental, comte or an aged gouda melt similarly and likewise bring barely any carbs. What matters is an aged hard cheese that forms a crust - mozzarella turns rubbery, and processed cheese preparations often contain starch.

Does the soup suit weight loss on keto?

It can, if you plan the serving in. At approx. 350 kcal it is a light main meal, but 6 g net carbs is not little for a soup. If you are counting very strictly, reduce the amount of onion or eat the soup as a starter rather than a main course.
