These keto butter cookies solve the problem that usually defeats sugar-free cutout cookies: without gluten the dough will not hold its shape. Psyllium husks and a share of coconut flour take on that job, so the dough can be rolled out and cut.

How it is made

Knead the almond flour, coconut flour, psyllium husks, erythritol, cold butter and eggs quickly into a dough and chill it for at least 60 minutes. Roll it out between parchment paper, cut out the cookies and bake at 160 degrees Celsius for about 12 minutes.

Why these cookies suit keto well

Classic butter cookies are about two thirds wheat flour and sugar - a single cookie therefore brings 5 to 8 g carbs, and on a plate of ten that adds up to more than a strict keto daily budget. The substitution is easier with shortcrust than with other baking, because shortcrust is not supposed to rise anyway: it needs no gas structure, only binding. That binding is exactly what is missing without gluten, which is why a pure almond flour dough crumbles and cannot be cut out. What psyllium husks do in the dough

Psyllium husks consist almost entirely of soluble fiber that binds many times its own weight in water and forms a gel in the process. In gluten-free doughs they therefore replace the binding property wheat protein would otherwise supply. Nutritionally they are a side effect that happens to be useful on keto: a ketogenic diet is often low in fiber, because whole grains and legumes drop out. Why does my keto cookie dough crumble?
