About this category
Sugar is off the table on keto, yet many dishes rely on some sweetness. This category collects recipes that use sugar substitutes such as erythritol, which has essentially no usable carbs, along with other low-carb sweeteners. It is not only about cake: you will also find a ketchup without sugar, a cocktail sauce for raclette, chicken teriyaki with broccoli and a sparkling berry lime lemonade.
Each sweetener behaves a little differently. Granulated erythritol can feel slightly cooling on the tongue and may recrystallize in cold desserts, so powdered erythritol is the better choice for creams, frostings and something like a no-bake cream cheese cake. In baked goods such as chocolate walnut brownies from almond flour, the sweetener also affects texture and browning, so stick to the type the recipe names.
Read blend labels carefully, because some products marketed as sugar alternatives are padded with maltodextrin or dextrose, which do count as carbs. Sweetness levels vary between brands, so taste and adjust in small steps. If you are trying to reduce cravings, treat these recipes as occasional rather than daily and let your palate get used to less sweetness overall.
