About this category
Vegan keto is the strictest combination on this site, because it removes every animal product while still keeping net carbs low. That rules out the usual staples of eggs, cheese and butter, and most legumes as well. What remains are avocado, coconut milk and coconut oil, olive oil, nuts, seeds, tofu and a wide range of low-starch vegetables. A spinach coconut dal or a kale tahini bowl with roasted cauliflower shows how filling these ingredients can be.
Pasta dishes lean on vegetable or konjac noodles. A mushroom and walnut bolognese over zucchini noodles gets its meaty texture from finely chopped mushrooms and nuts, and shirataki arrabiata keeps the carbs very low thanks to the konjac base. Many recipes here are also simple drinks and snacks, from electrolyte water with cucumber and lime to a salted almond and cacao nib mix.
Protein deserves attention on a vegan keto plan, so tofu, tempeh, hemp seeds and pumpkin seeds are worth keeping in the pantry. Read labels on plant milks and yogurt alternatives, since many contain added sugar. Electrolytes also matter during the first weeks of keto, which is one reason salty, mineral-rich drinks appear in this category.
