About this category
Nuts are everywhere in low-carb cooking, from almond flour in baking to walnuts in salads and nut butters in snacks. This category collects recipes that leave them out entirely, which helps if you have a nut allergy, pack lunch for a nut-free school or simply want a break from almond everything. Most savory dishes never needed nuts in the first place: beef short ribs with garlic herb butter, chili con carne without beans and salmon with lemon dill butter all rely on meat, fish, fat and spices.
Baking is where the swap gets interesting. Without almond flour, coconut flour takes over, but it absorbs far more liquid, so it is not a one-to-one replacement. A recipe like the coconut cake with shredded coconut is built around it from the start. Psyllium husk and ground flaxseed help with structure, and sunflower or pumpkin seeds add crunch where you would otherwise use chopped nuts.
Root vegetable sides such as rutabaga fries offer a crispy alternative to nut-based crusts. If an allergy is the reason you are here, check labels on chocolate, pesto, spice mixes and toppings, which may contain nuts or traces of them. If you are unsure whether coconut is safe for you, clarify that with your doctor.
