Keto Raclette Grill Plate: Chicken and Beef Strips with Paprika Garlic Marinade

Hot stone plate on top of a raclette grill with sizzling red-orange marinated chicken strips and dark-seared beef strips with rosemary, raclette pans with melted cheese underneath, on a laid table
Two marinades, two meats: paprika garlic chicken and rosemary mustard beef, straight on the raclette grill plate.
Ingredients for the keto raclette grill plate on a wooden board: raw chicken breast, a piece of beef rump, olive oil, garlic cloves, sweet and smoked paprika, a jar of Dijon mustard, fresh rosemary, half a lemon, salt and pepper
Chicken breast, beef rump and the ingredients for two sugar-free marinades.
Two glass bowls of thinly sliced meat strips: on the left chicken strips in a red paprika garlic marinade, on the right beef strips with mustard and chopped rosemary, next to them two tongs in different colors and a separate cutting board
Thinly sliced and marinated separately - with its own tongs for the raw poultry.

At a keto raclette, meat on the grill plate is the second star next to the cheese - as long as the marinade brings no sugar with it. This recipe gives you the ready-made meat component for four people: thin chicken strips in a paprika garlic marinade and beef rump with rosemary and mustard, together approx. 1 g net carbs and 34 g protein per person. On top you get the cooking times on the hot plate and the hygiene rules for raw poultry at the table.

  1. Cut the meat

    approx. 10 minutes
    Done Amount Icon Ingredient
300  g chicken breast in 5 mm thin strips
300  g beef rump in 5 mm thin strips across the grain; sirloin as an alternative

Pat the chicken breast (300 g) and beef rump (300 g) dry and cut them across the grain into strips about 5 mm thick. Use a separate board and knife for the poultry and wash them in hot water afterwards. Slightly frozen meat is especially easy to cut evenly.

  2. Paprika garlic marinade for the chicken

    approx. 5 minutes
    Done Amount Icon Ingredient
60  ml olive oil approx. 4 tbsp, 30 ml per marinade
3  cloves garlic 2 for the chicken, 1 for the beef; finely grated
1  tsp sweet paprika for the chicken
0.5  tsp smoked paprika for the chicken
10  ml lemon juice approx. 2 tsp, for the chicken
0.8  tsp salt 0.5 tsp for the chicken, 0.25 tsp for the beef
0.5  tsp pepper freshly ground, for both marinades

Stir the olive oil (30 ml) with 2 finely grated garlic cloves, sweet paprika (1 tsp), smoked paprika (0.5 tsp), lemon juice (10 ml), salt (0.5 tsp) and pepper (0.25 tsp). Turn the chicken strips in it until they are coated red all over.

  3. Rosemary mustard marinade for the beef

    approx. 5 minutes
    Done Amount Icon Ingredient
15  g Dijon mustard approx. 1 tbsp, with no added sugar, for the beef
3  g rosemary approx. 1 sprig, needles finely chopped, for the beef

Stir the olive oil (30 ml) smooth with 1 finely grated garlic clove, Dijon mustard (15 g), chopped rosemary (3 g), salt (0.25 tsp) and pepper (0.25 tsp). Mix in the beef strips.

  4. Leave to marinate

    at least 30 minutes

Cover both bowls and leave them in the fridge for at least 30 minutes, or overnight if you like. Take them out only shortly before eating and put each on the table with its own tongs.

  5. Cook on the grill plate

    2-8 minutes per round
    Done Amount Icon Ingredient
10  ml rapeseed oil approx. 2 tsp, for greasing the grill plate

Preheat the grill plate for 10 minutes and grease it thinly with the rapeseed oil (10 ml). Put on only six to seven strips at a time: beef 1 to 2 minutes per side for pink, chicken 3 to 4 minutes per side until white all the way through. Eat the cooked meat from your plate with your own fork, never with the tongs used for raw meat.

You did it! Enjoy every delicious bite.

Which tips help with meat on the raclette grill plate?

  • Slice the meat when it is slightly frozen - that makes even, 5 mm thin strips easy.
  • Marinate the chicken and beef in separate bowls and serve them with two tongs in different colors.
  • Preheat the grill plate for 10 minutes and oil it thinly before the first round.
  • Put no more than six to seven strips on at once so the plate stays hot.
  • Take the chicken off the grill only when it is no longer translucent inside; if in doubt, cut a strip open.
  • Add salt only in the marinade, not extra on the plate - the cheese will bring plenty later.

Why is the keto grill plate practically carb-free?

Chicken breast and beef rump contain no carbs. The few grams come from the garlic, paprika, mustard and lemon juice and add up to approx. 1 g net carbs per person. Per serving you get 34 g protein, 20 g fat and around 320 kcal; the fat comes almost entirely from the olive oil in the marinades. Store-bought raclette meat platters, on the other hand, are often coated in ready-made grill marinades containing sugar, glucose syrup or honey - that can easily mean 5 to 10 g sugar per 100 g of marinated meat. If you marinate yourself, you know exactly what is on the plate. Together with the cheese pans, the result is an evening with plenty of fat and protein and hardly any carbs.

What is different from a classic grill marinade?

The general keto grill marinade is a base recipe for the backyard grill, used to marinate whole steaks, chops or vegetables. This recipe, by contrast, is a ready-made raclette component: the amount of meat for four people, two marinades that work together, a cut that cooks on the small stone plate in a few minutes, and a setup where everyone at the table cooks for themselves. That is why the marinades are a little oilier - the oil greases the plate at the same time, and the strips do not stick.

Raw poultry at the table: hygiene without stress

Raw chicken can carry Campylobacter and Salmonella. The German Federal Institute for Risk Assessment (BfR) recommends cooking poultry all the way through - at least 70 °C (158 °F) in the center for 2 minutes - and not touching raw meat with cutlery or boards that are then used for cooked food. At the raclette table that means: the raw chicken gets its own tongs and its own bowl, and everyone eats with their own fork only from the finished plate. The marinade that raw meat has been sitting in is never used as a dip.

How do I serve and vary the grill plate at a raclette night?

Place the two bowls of meat at opposite ends of the table, each with its own tongs, and put the grill plate on the machine to preheat for 10 minutes before eating. On a hot stone or metal plate the strips need different times: beef rump 1 to 2 minutes per side for pink, chicken 3 to 4 minutes per side until it is white inside and no longer translucent. In my experience the most common mistake is an overloaded plate - with more than six or seven strips on it at once, it cools down, the meat releases water and stews instead of browning. Better to cook in small rounds and move the meat straight from the grill into a cheese pan or onto your plate. In autumn, when raclette season begins, the pumpkin pan and the mushrooms from the base recipe go well with it.

Prepping ahead, marinating and using leftovers

You can cut and marinate the meat the day before; covered in the fridge it keeps without a problem until the evening, and the mustard even makes the beef more tender. Take it out only shortly before eating - raw poultry should not sit on the table at room temperature for hours. Cooked leftovers keep for 2 days in the fridge and taste good cold in a salad or briefly reheated in a pan with a fried egg for breakfast.

Without chicken: variations with beef, pork or halloumi

If you would rather skip poultry or avoid the hygiene question altogether, use twice the amount of beef rump or pork tenderloin and marinate half of it with paprika and garlic. For a vegetarian grill plate the paprika garlic marinade also works with halloumi slices, zucchini and mushrooms; halloumi needs 2 minutes per side and brings hardly any carbs of its own.

FAQ

Is meat from the raclette grill keto?

Yes, as long as the marinade is sugar-free. Chicken breast and beef rump contain no carbs; with the two marinades from this recipe the grill plate comes to approx. 1 g net carbs per person. Pre-marinated raclette platters from the chilled aisle, on the other hand, often contain sugar or honey.

Which beef is best for the raclette grill plate?

Beef rump is ideal because it is lean, tender and reasonably priced. Sirloin and strip steak work just as well; tenderloin is more tender but considerably more expensive. Braising cuts such as shoulder or shank turn tough in the few minutes on the plate.

How long does chicken need on the raclette grill plate?

For 5 mm thin strips, about 3 to 4 minutes per side on a well-preheated plate. The chicken is done when it is white all the way through and no longer translucent. The BfR recommends a core temperature of at least 70 °C (158 °F) for 2 minutes for poultry.

Does the grill plate suit weight loss on keto?

Yes. At around 320 kcal and 34 g protein per person, the grill plate is filling and makes it easier to stay moderate with the cheese pans. If you want to save calories, halve the olive oil in the marinades - that saves about 60 kcal per person.

Can I put the marinade on the table as a dip?

No, not the marinade that raw meat has been sitting in. If you want a dip, mix a small extra portion of the paprika garlic marinade beforehand, or serve an aioli or herb butter alongside.
