About this category
Eggs show up in a surprising number of low-carb recipes, as the protein at breakfast, the binder in breading and the structure in baked goods. This category leaves them out, which is helpful with an egg allergy or if you are simply tired of omelets. Breakfast becomes coconut yogurt with walnuts and flaxseed or a camembert, walnut and ham plate, and dinner is anything from a lamb curry with coconut milk and spinach to sea trout baked in foil with fennel and herb butter.
The trickiest part is replacing eggs as a binder. A turkey cordon bleu without breading skips the coating step entirely, and cauliflower wings from the air fryer get their crispness from hot air rather than an egg wash. For baked goods, a flax or chia gel, psyllium husk or a little extra cream cheese can sometimes take over, although results vary and work best in recipes developed for it.
Desserts are easier than you might expect. A panna cotta with strawberry sauce sets with gelatin instead of eggs, and many creamy desserts work the same way. When buying ready-made products like mayonnaise, pasta alternatives or baked goods, check the labels, since eggs are often included even when the product name does not suggest it.
