Rutabaga (also known as swede or yellow turnip) is the underrated cousin of the potato. When roasted, it develops a pleasantly sweet, slightly caramelised note, similar to sweet potato but with only a third of the carbs. Each serving delivers 6 g net carbs and 18 g fat. Preparation

Preheat the oven to 220 C (425 F), conventional heat. Peel the rutabaga generously, the outer bitter layer needs to come off completely. First cut into 1 cm thick slices, then into 1 cm wide sticks. Keep them even, otherwise some will crisp up while others go soggy. In a bowl, toss the sticks with 3 tbsp olive oil, 1 crushed garlic clove, 1 tbsp fresh rosemary and 1/2 tsp salt until everything is well coated. Spread on a baking sheet lined with parchment paper in a single layer. Important: the sticks should not touch each other. Bake for 25 to 30 minutes, turning once after 15 minutes. They are done when the edges are deep golden and slightly curled. Serve with coarse salt and fresh rosemary needles.

Why rutabaga instead of potato?

Rutabaga contains 4.9 g net carbs per 100 g, roughly a third of a potato (15 g) and just over a quarter of a sweet potato (17 g). Still, when roasted it tastes similarly sweet and earthy to sweet potato, because the sugars and carotene caramelise in the heat. Honestly: rutabaga fries are not quite as neutral as celeriac fries. They keep their earthy character. If that is not your thing, stick with the celeriac version. If you love sweet potato fries, you will appreciate rutabaga as an excellent keto substitute.

Which seasonings work best?

Rosemary and garlic are the classics. Other great options: Smoked paprika (1 tsp) adds a BBQ note and pairs sensationally with grilled meat. Cumin and coriander (1/2 tsp each) push the fries in a Middle Eastern direction. Thyme and sage both harmonise beautifully with the sweet root. If you like heat, add a pinch of cayenne. For dipping, garlic mayo works perfectly, or a mustard dip made from sour cream, hot mustard and a touch of erythritol.

  • Peel the rutabaga generously, the outer layer is bitter.
  • Cut the sticks evenly to 1 cm wide.
  • Every stick needs a film of oil.
  • Bake in a single layer, do not stack.
  • Rosemary gives the best aroma.

FAQ

Are 6 g net carbs still strict keto?

With a typical keto limit of 20 to 30 g per day, rutabaga fries fit in nicely as an occasional side dish. For very strict phases under 20 g, I would lean toward celeriac or cauliflower fries instead.

Does rutabaga have a strong flavour?

It has a mildly earthy, cabbage-like flavour of its own that mellows during roasting. If you enjoy savoy cabbage or kohlrabi, you will not mind it at all. If you expect a very neutral taste, celeriac is the better choice.

Does the air fryer work?

Very well. At 200 C (400 F), cook for 15 to 18 minutes and shake halfway through. The fries often turn out even crispier in the air fryer than in the oven.
