Preparation

Preheat the oven to 220 °C fan. Peel 2 medium kohlrabi (about 350 g each), cut into 1 cm thick slices, then into 1 cm wide sticks, just like classic fries. Size matters: too thin and they turn leathery, too thick and they stay hard inside. In a large bowl, toss thoroughly with 3 tbsp olive oil, 1 tsp sweet paprika, 1/2 tsp garlic powder, 1/2 tsp fine salt and a pinch of black pepper until every stick is evenly coated. Spread the sticks in a single layer on a parchment-lined baking sheet, making sure they do not touch, otherwise they steam instead of roasting. Bake in the hot oven for 20 minutes, flip with a spatula, scatter 30 g freshly grated Parmesan over the top and bake for another 8 to 10 minutes until golden and crisp at the edges. Sprinkle with freshly chopped parsley and serve immediately with mayonnaise or a garlic-yogurt dip.

Why does kohlrabi work as a fries substitute?

Kohlrabi belongs to the brassica family but in flavor and texture sits closer to a young radish or a mild potato. Raw it tastes slightly sweet and crunchy; in the oven its cell sugars caramelize and develop roasted aromas. Variations and dips

FAQ

Do the fries really turn crispy?

They will not get crispier than potatoes, kohlrabi holds more water and less starch. But with enough heat (220 °C), enough oil and no stacking on the tray, they develop a clear crispy crust. For maximum crunch, finish the baked sticks for 2 minutes in an air fryer at 200 °C.

Can I make them in an air fryer?

Yes, excellent results. Run at 200 °C for 18 minutes and shake halfway through. It saves time and oil, and the result is more even. Add the Parmesan in the last 3 minutes so it does not burn.

How do I reheat them?

Use the oven or air fryer at 200 °C for 5 minutes, they crisp back up. The microwave is fatal for texture, the sticks turn soft and rubbery.
