Switchel is a historic American thirst quencher: haymakers and farmers mixed ginger water with apple cider vinegar and a touch of sweetener to recover from long days in the field. The blend of acidity, ginger heat and chill is noticeably more reviving than plain water, and with erythritol instead of honey it fits perfectly into a keto routine. How to make it

Peel 4 cm of fresh ginger and cut it into thin slices. Bring 200 ml of water to a boil, take the pan off the heat and let the ginger steep for 10 minutes; for a sharper kick, leave it for 30 minutes. Strain the ginger infusion and let it cool completely. Into a tall glass filled with ice cubes, add 100 ml of the cooled ginger water, 2 tbsp of unfiltered apple cider vinegar, the juice of half a lime and 1 tsp of erythritol. Top up with 150 ml of cold sparkling water for a fizzy lift, stir briefly and serve with a slice of lime.

Why switchel fits a keto diet

Classic switchel relies on maple syrup or honey, both unsuitable at 60 to 80 g of carbs per 100 g. The keto version swaps the syrup for erythritol.
