Classic store-bought lemonade delivers 25 to 30 g of sugar per glass, the opposite of keto-friendly. The homemade version uses fresh berries, lime and sparkling water. It tastes fruitier because the aromas are never cooked down, and a single glass lands at just around 3 g of net carbs. Among berries, raspberries have the lowest carb count and fit perfectly into a keto lemonade.

Preparation

Crush 50 g of fresh or thawed raspberries into a coarse puree with a fork or an immersion blender. If you prefer no seeds in the glass, push the puree through a fine sieve, although that halves the already modest fiber content. Stir the berry puree with the juice of half a lime and 1 tsp of erythritol in a tall glass until the erythritol has dissolved. Add ice cubes and top up with 250 ml of cold sparkling water. Stir gently, not too vigorously, otherwise the carbonation will escape. Garnish with a slice of lime and a sprig of mint.

Why this lemonade fits keto

Raspberries are the best keto fruit among berries: 100 g contain around 5 g of net carbs and 7 g of fiber. So 50 g per glass adds just 2.5 g of net carbs. Lime is also uncritical at 2 g of carbs per tablespoon. Erythritol provides no usable calories and dissolves only moderately in cold liquid, which is why it should be stirred in before the sparkling water. Watch out for store-bought "sweetener lemonades": many contain aspartame and acesulfame-K, often combined with apple juice concentrate, which is essentially sugar and not keto-friendly.

How can I vary the lemonade?

Strawberry basil: 60 g of strawberries plus 3 crushed basil leaves. Very summery. Blackberry lime: blackberries sit at around 5 g of net carbs per 100 g, similar to raspberries. They produce a darker color and a deeper flavor. Blueberry lemon: blueberries are noticeably higher at 12 g of carbs per 100 g, so reduce the amount to 30 g and use lemon instead of lime. Make-ahead syrup: simmer 200 g of raspberries with 100 ml of water and 4 tbsp of erythritol for 5 minutes, strain through a sieve and let cool. Keeps for 7 days in the fridge. Top 2 tbsp of syrup per glass with sparkling water. Mocktail version: serve with a sprig of rosemary and a pinch of pink pepper, which gives it an aperitif feel.

Tips for foolproof berry lemonade

  • Dissolve the erythritol in the berry puree before adding the sparkling water, since cold carbonated water dissolves erythritol poorly.
  • Keep the sparkling water cold; warm lemonade loses its fizz quickly.
  • Use frozen berries: available year-round and often better tasting than unripe fresh berries.
  • Squeeze lime juice fresh; bottled juice often tastes bitter.
  • Adjust sweetness to taste, since berries vary in acidity and natural sweetness.

Which berries work best?

Raspberries, blackberries and strawberries are keto-friendly (4 to 6 g of net carbs per 100 g). Blueberries are higher (12 g), while cherries and grapes clearly don't fit. Frozen berries are a budget-friendly year-round option.

How long does the lemonade keep?

Without the sparkling water: the berry, lime and erythritol concentrate keeps for 3 days in the fridge. Once mixed with sparkling water: only 1 to 2 hours, after that the carbonation is gone.

Can I use stevia instead of erythritol?

Yes, but dose it carefully. Stevia is 200 to 300 times sweeter than sugar, so one drop is enough for a glass. The advantage of erythritol is that it has volume, which gives the mouthfeel of a classic syrup.
