A coffee-shop chai latte is usually little more than chai syrup mixed with milk, a far cry from real masala chai, and it packs 25 to 35 g of sugar per cup. Brew your own with whole spices and you get a deep, aromatic drink with just 3 g of net carbs and 18 g of fat. How to make it

Lightly crush 4 cardamom pods with the back of a knife. Slice 1 cm of fresh ginger into thin rounds. In a small pot, simmer 150 ml water with 1 cinnamon stick, 3 cloves, 4 black peppercorns, the cardamom pods and the ginger over medium heat for 5 minutes. Add 150 ml coconut milk, stir in 1 heaped tsp of loose black tea (or 1 tea bag) and steep for another 3 minutes, do not boil. Strain through a fine sieve into a prewarmed cup, stir in 1 tsp erythritol and froth briefly with a milk frother.

Why this chai latte works on keto

The five classic chai spices, cardamom, cinnamon, cloves, black pepper and ginger, contribute virtually no usable carbs in the quantities used. Unsweetened black tea sits at 0 g of carbs per cup. The only relevant source is coconut milk (around 2 g of carbs per 100 ml), giving a total of roughly 3 g of net carbs per serving. How can I vary the chai latte?

With cream: 100 ml water, 100 ml coconut milk and 50 ml heavy cream make a particularly rich cup. Caffeine-free: swap the black tea for rooibos, its earthy character pairs beautifully with the spices. Dirty chai: pour 1 espresso (30 ml) into the finished chai for an Indian-style chai mocha. Tips for a foolproof chai latte

  • Whole spices taste noticeably better than ground blends, the aroma stays fresher.
  • Only lightly crush the cardamom pods, do not grind them, otherwise too much bitterness is released.
  • Do not steep the tea for too long (max. 4 minutes), or bitterness will take over.
  • Do not boil the coconut milk, it will split.
  • Do not skip the pepper, the gentle heat is what rounds the chai out.

FAQ

Which tea works best?

Assam is the classic choice, bold and malty, a natural match for the spices. Ceylon or Darjeeling also work but are more delicate. Earl Grey, on the other hand, clashes with bergamot and cardamom and is not recommended.

Can I use ready-made chai tea bags?

Yes, but most chai tea bags contain only small amounts of spice and rely mostly on black tea with flavorings. Flavor-wise, there is a world of difference between a tea bag and freshly simmered whole spices. If you do use bags, pick a quality brand like Yogi Tea or Pukka, both are unsweetened.

How spicy does the pepper make the chai?

With 4 peppercorns in 300 ml of liquid, the heat is barely perceptible. The pepper rounds out the aroma and gives a gentle warmth in the throat rather than heat on the tongue.
