Matcha is finely ground Japanese green tea. Unlike steeped tea, you drink the whole leaf, which delivers about three times the caffeine and noticeably more L-theanine, giving a calmer, longer-lasting alertness than coffee. With unsweetened almond milk and a splash of cream, it turns into a creamy latte with just 2 g of net carbs per glass.

Preparation

Sift 1 tsp of matcha powder (approx. 2 g) into a cup, this prevents lumps. Add 50 ml of hot (not boiling) water at around 75 °C and whisk for 30 seconds with a bamboo whisk (chasen) or milk frother until you have a dense green foam. At the same time, warm 200 ml of unsweetened almond milk with 30 ml of cream in a saucepan or milk frother to 60 to 65 °C and froth until creamy. Pour the matcha into a tall glass, stir in 1 tsp of erythritol, then slowly pour the almond milk and cream mixture over the top.

Why this matcha latte fits keto

Pure matcha powder contains virtually no usable carbs per serving (2 g). Unsweetened almond milk has less than 1 g of carbs per 100 ml, and cream sits at around 3 g of carbs per 100 ml. Problems usually appear with the sweetener: classic café-style matcha latte powder blends often contain 15 to 25 g of sugar per serving. Made at home with erythritol or stevia, the drink stays strictly keto.

How can I vary the matcha latte?

Hot classic: as above, with warm almond milk. Iced matcha: whisk the matcha with cold water, pour into a glass filled with ice cubes, top with cold almond milk and cream, pleasantly bitter-sweet in summer. Vanilla matcha: stir a pinch of ground vanilla into the matcha. Coconut matcha: swap the almond milk for unsweetened coconut milk drink, it pairs especially well with the grassy notes of matcha. More fat: blend 1 tsp of MCT oil or coconut oil into the hot latte for a filling "bulletproof matcha".

Tips for foolproof matcha

  • Do not boil the water, anything over 80 °C makes matcha bitter.
  • Sift the matcha powder or whisk vigorously, otherwise lumps remain.
  • Mind the food grade: culinary grade is fine for lattes, ceremonial grade is finer and pricier.
  • Store matcha in a dark, cool spot, light and heat destroy the chlorophyll and flavour.
  • If you are iron-deficient, do not drink matcha with meals, the tannins inhibit iron absorption.

FAQ

Which matcha powder should I buy?

Culinary grade is plenty for lattes (stronger note, cheaper). Ceremonial grade is finer and sweeter but too good to waste in a latte. Look for organic quality and an intense green colour, yellowish powders are old or low quality.

Why use cream and not just almond milk?

A splash of cream provides a stable, creamy mouthfeel. On its own, almond milk often feels thin in a latte compared with whole milk. If you want to stay dairy-free, replace the cream with 30 ml of full-fat canned coconut milk.

Is matcha healthier than coffee?

Both have pros and cons. Matcha delivers L-theanine, which softens the caffeine ramp-down; coffee has more antioxidants per cup. For keto both are fine, as long as nothing sweet is added.
