Golden milk is a traditional Indian hot drink: turmeric, ginger and black pepper are dissolved in hot milk to make an earthy, spiced, sun-yellow drink. In the keto-friendly version, full-fat coconut milk takes over from cow's milk, the result is creamy, spiced and completely sugar-free. Per mug: roughly 2 g net carbs and 22 g fat.

Preparation

Pour 250 ml of canned coconut milk (at least 70% coconut) into a small saucepan. Stir in 1 tsp turmeric powder, 1 cm of finely grated fresh ginger, 1 pinch of black pepper and 1/2 tsp cinnamon. Warm slowly over medium heat while stirring, do not boil, otherwise the proteins in the coconut milk will curdle. After about 3 minutes, stir in 1 tsp erythritol, then froth for 15 seconds with a milk frother or immersion blender. Pour into a pre-warmed mug and dust with a pinch of cinnamon if you like.

Why golden milk fits a keto lifestyle

Canned coconut milk delivers around 20 g of fat and just 2 g of carbs per 100 ml, making it one of the few plant-based milk alternatives with enough fat to build a satisfying latte. Turmeric, ginger and cinnamon contain virtually no usable carbohydrates in the quantities used here. The black pepper is not optional: studies show piperine increases the bioavailability of curcumin many times over. Stevia drops or monk fruit work just as well as erythritol.

How can I vary the golden milk?

Creamier: add 1 tsp coconut oil or MCT oil for a thicker foam crown and more satiety. More aromatic: crack 1 cardamom pod and let it steep, or add a clove. Remove both before drinking. With a tea base: mix 150 ml coconut milk with 100 ml freshly brewed rooibos or black tea, lighter and less coconut-heavy. Cold version: blend all ingredients cold and pour over ice cubes for an iced turmeric latte.

Tips for foolproof golden milk

  • Do not boil the coconut milk, simmering makes it split.
  • Do not skip the black pepper: piperine is what makes turmeric properly bioavailable.
  • Fresh ginger tastes noticeably rounder than powder, but you can swap in 1/2 tsp ginger powder.
  • Turmeric stains: wooden spoons and light-colored mugs are sensitive.
  • A milk frother creates a more stable foam than a whisk.

FAQ

Can I use almond milk instead of coconut milk?

Yes, but the fat content and satiety will drop sharply (around 4 g of fat per 250 ml). If you are trying to lose weight, this version works as a low-calorie cup, but it will not stand in as a meal replacement.

Which coconut milk should I use?

Full-fat canned coconut milk with at least 70% coconut content. Light versions (40-60%) are keto-friendly but less creamy. Carton coconut drinks are usually diluted and often contain added sugar, so check the label.

How long does turmeric take to work?

Curcumin is fat-soluble. Combined with black pepper and the fat base of coconut milk, absorption is better than from isolated turmeric. Do not expect acute effects, the benefits build up with regular consumption.
