Store-bought drinking chocolate is a sugar problem: a single serving of Cadbury powder often delivers 20 g of sugar, and a cafe cocoa mix can hit 30 to 40 g per cup. This keto version uses unsweetened cocoa, a bit of cream and erythritol, and tastes noticeably more chocolatey than any instant powder because there is no starch or skim milk dulling the flavor. Per cup: 3 g net carbs, 28 g fat.

Preparation

Pour 100 ml of cream and 150 ml of water into a small saucepan and warm over medium heat. In a small bowl, mix 2 tbsp unsweetened cocoa with 1 tbsp erythritol and a pinch of salt, this prevents lumps. Once the liquid is warm (not hot), stir in the cocoa-erythritol mixture in a thin stream. Add a knife tip of ground vanilla. Continue heating for 2 minutes, whisking constantly, until the cocoa is fully dissolved, but do not let it boil. Remove from the heat, froth for 10 seconds with an immersion blender or milk frother, and pour into a prewarmed mug.

Why this hot chocolate fits keto

Unsweetened cocoa powder (heavily defatted) delivers around 11 g net carbs, 14 g fat and plenty of polyphenols per 100 g. A cup with 2 tbsp (approx. 12 g) therefore contributes only about 1.3 g net carbs from the cocoa. Cream (32% fat) adds about 32 g fat and 3 g carbs per 100 ml. Important: do not use "drinking cocoa" mixes, powders like Nesquik or Swiss Miss are 70 to 80% sugar. For sweetening, erythritol is the first choice because it dissolves completely in a hot drink.

How to vary the hot chocolate

Creamier: increase cream to 150 ml and reduce water to 100 ml, which also bumps the cup to about 350 kcal. With dark chocolate: instead of cocoa, melt 20 g of sugar-free 85% chocolate into the warm liquid. The taste is rounder, but the fat content is higher. Spiced: a pinch of cinnamon and a hint of chili (just the tip of a teaspoon) for an Aztec-style hot chocolate. Minty: 2 drops of food-grade peppermint oil for an After Eight aroma. Mocha: stir in 30 ml of espresso to turn it into a coffee-chocolate version.

Tips for foolproof hot chocolate

  • Mix cocoa with erythritol while dry, this prevents lumps.
  • Do not skip the salt: a pinch lifts the chocolate flavor.
  • Do not boil, otherwise the cream takes on a cooked taste.
  • Use unsweetened cocoa, not drinking cocoa, since instant mixes are loaded with sugar.
  • Use an immersion blender to froth a proper foam crown.

FAQ

Which cocoa is best for keto?

Pure unsweetened cocoa (defatted cocoa) with no added sugar. Brands like Hershey's Natural Unsweetened, Ghirardelli unsweetened or organic cocoa from a health-food store all work. A quick look at the ingredient list is enough: it should list only "cocoa" or "cocoa, lightly defatted".

Can I make this hot chocolate vegan?

Yes. Replace the cream with 100 ml of full-fat canned coconut milk. The cup turns slightly coconutty, which actually pairs nicely with the chocolate.

Does the cocoa keep overnight?

Stored in a sealed bottle in the fridge, it keeps for about 2 days. Do not boil it before drinking, just warm it gently and re-blend, otherwise the fat phase separates.
