About this category
Italian cuisine is a natural partner for keto in many ways. Olive oil, Parmesan, mozzarella, prosciutto, tomatoes and fresh herbs are all welcome, and the only real obstacle is the starch in pasta, rice, bread and polenta. The recipes in this category solve that with vegetables and konjac: zucchini carbonara with bacon, spaghetti squash puttanesca and shirataki bolognese all keep the familiar sauces while changing the base.
Lasagna works surprisingly well with thin layers of cabbage, eggplant or pumpkin instead of pasta sheets, and a cabbage lasagna with ground beef can be layered and sliced like the original. Risotto becomes a cauliflower rice dish, as in the pumpkin cauliflower rice risotto with bacon and Parmesan, which gets its creaminess from cheese and butter rather than from released starch.
Tomatoes contain some natural sugar, so use passata or canned tomatoes without additives and keep portions of tomato-heavy sauces in mind. Store-bought pesto often contains cheap oils or fillers, while homemade pesto is quick to blend. For dessert, tiramisu in a jar uses mascarpone, coffee and erythritol, and a panna cotta with strawberry sauce sets with gelatin and cream.
