Preparation

Bring salted water to a boil and blanch the calamari rings for 90 seconds; no longer, otherwise they turn rubbery. Shock in ice water and drain. Toss with olive oil, lemon juice, pressed garlic, chopped parsley and chili flakes, then let rest for 5 minutes.

Why squid salad fits keto

Squid (calamari) contains about 15 g protein, 1 g fat and 0 g carbs per 100 g, making it an extremely lean seafood protein. Since it has barely any fat of its own, the keto fat ratio can be steered entirely through olive oil (2 tbsp = 20 g fat). Lemon juice (1 tbsp) adds approx. 0.5 g carbs, garlic less than 0.5 g, parsley 0.1 g.
