About this category
Seafood is a fast route to a keto dinner. Shrimp, scallops and squid cook in a few minutes and need little more than fat, garlic and acid to taste good. Shrimp scampi in garlic butter is the classic example, and scallops with bacon add a smoky, salty contrast to their sweetness. Some dishes in this category combine shellfish with fish, which is why salmon recipes appear here as well.
Shellfish are low in carbs, though mussels and oysters contain a little more than shrimp or crab, which still leaves plenty of room in a keto day. Mussels in white wine broth feel like a restaurant meal, and the broth tastes great with a slice of keto bread. A crab salad with avocado or an Italian squid salad works as a light lunch or starter.
Frozen shrimp and squid are convenient, but check the ingredient list for added glazes or marinades with sugar. Imitation crab sticks are usually made with starch and sugar, so real crab meat is the better pick. Cook shellfish only until just done, since overcooked shrimp and squid turn rubbery. Fresh mussels should be closed before cooking; discard any that stay open when tapped.
