Preparation
Wash the mussels thoroughly, remove the beards and discard any that are open or damaged. Sweat the shallots and garlic in butter until translucent, deglaze with white wine and bring briefly to a boil. Add the mussels, cover and steam for 5 minutes until all the mussels have opened.
