Preparation

Preheat the oven to 200 °C (top/bottom heat). Halve a ripe avocado and remove the pit. With a spoon, scoop out a little flesh (approx. 1 tbsp per half) so the egg has room. Do not throw the flesh away, serve it alongside later. Place the avocado halves on a baking sheet and prop them up with crumpled balls of foil or parchment paper so they sit level. Crack 1 egg into each hollow (it works best to crack the eggs into a cup first and only add the yolk plus part of the white, otherwise the rest will overflow). Salt, pepper, top with bacon strips. Bake for 12 to 15 minutes until the white is set but the yolk is still runny. Sprinkle with chives.

Half an avocado (approx. 80 g) delivers around 12 g fat, 7 g fiber, and just 1.5 g net carbs. How can I vary this breakfast?

Instead of bacon, lean turkey ham or smoked salmon works well. Add the salmon only after baking. Cheese variant: 15 g grated cheddar or Parmesan goes into the hollow during the last 3 minutes and lightly gratinates. Vegetarian: skip the bacon and add 1 tbsp sour cream and a little smoked paprika on top of the egg. If you do not like runny yolk, crack only the white into the hollow; the baking time drops to 10 minutes. Note: very unripe avocados taste bitter and do not soften in the oven.   • Crack the yolk and part of the white in separately, otherwise the hollow gets too full.
  • Bake at 200 °C for 12 to 15 min.; any longer and the yolk turns hard.
  • Serve fresh, reheated the avocado loses its texture.

Doesn't the avocado turn bitter in the oven?

Ripe avocados stay mild. Unripe or overripe fruit can turn slightly bitter in the oven. So check avocados with a gentle thumb press before they go into the oven.

Can I prepare the avocado in advance?

No, baked avocados only taste good fresh. You can, however, season the bacon and separate the eggs ahead of time.

Which avocado variety works best?
