Preparation

Pound the turkey cutlets flat, spread with cream cheese and top with sun-dried tomatoes. Slice the zucchini lengthwise into thin strips. Roll up each cutlet, wrap with zucchini strips and secure with toothpicks. Bake in a preheated oven at 200 degrees Celsius for approx. 12 minutes, until the turkey is cooked through.

Why turkey zucchini rolls fit a keto diet

Turkey breast contains around 24 g protein and under 1 g fat per 100 g. That is too lean for keto, which is why cream cheese steps in as the fat source. Full-fat cream cheese delivers approx. 24 g fat per 100 g with just 3 g net carbs. Sun-dried tomatoes in oil add flavor and fat with minimal carbs. Zucchini has only 2.3 g net carbs per 100 g and forms a low-carb wrapper instead of flour or puff pastry. Together this gives a profile of 30 g fat, 38 g protein and 4 g net carbs per serving, perfect for keto. Compared with similar rolls made with puff pastry (approx. 25 g net carbs), the zucchini version saves a huge amount of carbs.

Which cream cheese for keto?

Full-fat cream cheese (at least 60% fat in dry matter) is ideal because it delivers the most fat per serving with very few carbs. Light or reduced-fat versions throw the keto ratio out of balance. Herbed cream cheese works flavor-wise, as long as no sugar has been added.

Zucchini instead of pastry: the keto advantage

Zucchini is 95% water and brings only 2.3 g net carbs per 100 g. As a wrapper for rolls, it replaces puff pastry or toast, which deliver 30 to 50 g net carbs per 100 g. At the same time it holds the filling together and becomes pleasantly tender in the oven.

How to serve and vary the rolls

Serve the rolls straight from the oven while the cream cheese is still creamy and warm. In practice I recommend pairing them with a small arugula salad dressed with olive oil and lemon, or with sauteed mushrooms. The rolls look elegant on the plate and are well suited for guests.

Meal prep and taking them along

The rolls can be fully prepared in advance and stored raw in the fridge, then just popped into the oven the next day. Once baked they keep for 2 days. Serve cold as a snack or briefly reheated in the microwave.

Without turkey

Thin chicken breast works as a substitute with similar nutrition values. For a vegetarian version, large mushrooms can be filled with cream cheese and tomatoes and wrapped in zucchini, though the protein content drops noticeably.

Which tips help with the turkey zucchini rolls?

  • Pound the turkey cutlets between cling film to approx. 5 mm thickness so they roll up easily.
  • Slice the zucchini lengthwise with a peeler or mandoline into long, thin strips, approx. 2 to 3 mm thick.
  • Use sun-dried tomatoes in oil: they are softer and add extra fat right away.
  • Toothpicks or wooden skewers hold the rolls together during baking; remove them before serving.
  • Preheat the oven to 200 degrees Celsius so the rolls cook evenly and quickly.

FAQ

Are turkey zucchini rolls keto-friendly?

Yes, with 4 g net carbs per serving they are ideal for keto. The zucchini replaces carb-heavy pastry, and the cream cheese provides the necessary fat. Important: use full-fat cream cheese, not the light version.

Can I use something other than sun-dried tomatoes?

Yes, a few slices of pan-fried bell pepper or olive tapenade work as a substitute. Fresh pesto also pairs well. Keep an eye on the carb content: fresh bell pepper has slightly more carbs than sun-dried tomatoes in oil.

Are the rolls suitable for weight loss?

With 440 kcal, 38 g protein and only 4 g net carbs, the rolls are a filling but calorically moderate meal. If you want to cut calories further, you can slightly reduce the amount of cream cheese.

Can I pan-fry the rolls instead of baking them?

Yes, fry them in a non-stick pan over medium heat for approx. 4 minutes per side. The oven gives more even results, though, since the rolls cook from all sides at once.
