Sauerkraut is fermented cabbage, and that makes it two things at once: a sodium source (approx. 0.9 g salt per 100 g) and a carrier for probiotics in the form of lactic acid bacteria. Mackerel adds about 520 mg of potassium and roughly 2 g of EPA/DHA per 100 g. This bowl pairs traditional German cooking with an electrolyte focus: sodium from the fermentation brine, potassium from the fish, probiotics for gut health, all at approx. 4 g net carbs.

  1. Prepare the mackerel

    approx. 5 minutes
300  g smoked mackerel gutted, skin and bones removed

Skin the smoked mackerel (300 g) by pulling the skin off from the tail end. Carefully remove the bones. Break the fish into coarse pieces, not too small, so the texture holds up.

  2. Mix the dressing

    approx. 3 minutes
    60  g sour cream approx. 4 tbsp; 30 % fat
10  g fresh dill 2 tbsp, finely chopped
    1  tsp Dijon mustard
15  ml lemon juice approx. ½ lemon
    1  pinch pepper

Stir the sour cream (4 tbsp) with the chopped dill (2 tbsp), Dijon mustard (1 tsp), lemon juice (1 tbsp) and pepper until smooth. Let it sit briefly to develop flavor.

  3. Assemble and serve

    approx. 5 minutes
200  g raw unpasteurized sauerkraut unpasteurized, from the refrigerated section

Drain the sauerkraut (200 g) well and place it as the base in the bowls. Arrange the mackerel pieces on top. Spoon over the dill sour cream dressing. Serve immediately.

You did it! Enjoy every delicious bite.

Which tips make the keto sauerkraut mackerel bowl better?

  • Use raw sauerkraut from the refrigerated section instead of canned, for live probiotics.
  • Do not heat the sauerkraut, temperatures above 40 °C kill the lactic acid bacteria.
  • Serve the mackerel at room temperature, straight from the fridge it tastes far less aromatic.
  • Season the sour cream with a little lemon juice and mustard, that cuts the richness of the mackerel.
  • Use fresh dill generously, its essential oils pair perfectly with fish and sauerkraut.

Why are sauerkraut and mackerel an electrolyte duo on keto?

Thanks to fermentation, sauerkraut provides about 0.8 to 1 g of salt per 100 g as natural sodium, plus vitamin C and lactic acid bacteria (Lactobacillus strains). On a ketogenic diet, sauerkraut is an ideal sodium source that also supports the gut microbiome. Smoked mackerel delivers about 520 mg of potassium and roughly 2 g of EPA/DHA per 100 g, making it one of the richest omega-3 fish options available. Potassium and sodium act as counterparts in the body: getting enough of both supports nerve conduction and helps prevent the muscle cramps that often show up during the keto adaptation phase.

Sauerkraut: probiotics only in raw, unheated products

Pasteurized sauerkraut (canned or jarred with heat preservation) no longer contains live bacteria, only the sodium and vitamin C remain. For real probiotics, choose raw, lacto-fermented sauerkraut from the refrigerated section (for example from a health food store or organic grocer). You can recognize it by the cold storage and labels such as 'raw' or 'unpasteurized'.

Mackerel: smoked versus packed in oil

Smoked mackerel contains about 2.5 g of salt per 100 g, more than fresh mackerel, which is actually helpful on keto. Canned mackerel in oil is also keto-friendly with similar nutrition values; it is cheaper and keeps longer. For better flavor and texture, smoked mackerel is the preferred option.

How do I serve and vary the keto sauerkraut mackerel bowl?

From my own experience, this bowl is one of the most filling and warming keto meals in winter: the sauerkraut brings acidity, the mackerel adds fat and umami, and the sour cream provides creaminess. In practice it works great as a packed lunch, since every component is stable and does not need to be reheated.

Meal prep: keep bowl components separate

Store sauerkraut, mackerel and sour cream separately. Each keeps for 3 to 4 days in the fridge. Only assemble at serving time, otherwise the sauerkraut will water down the sour cream. Always add the dill fresh.

Variation: with matjes herring instead of mackerel

Matjes herring is milder and less fatty than smoked mackerel. The salt content is similar (approx. 1.5 to 2 g per 100 g), with slightly less potassium. Combined with sauerkraut you get a lighter, more tart bowl. A classic in northern German cooking.

FAQ

Does sauerkraut really contain live bacteria?

Only raw, unpasteurized sauerkraut from the refrigerated section contains live lactic acid bacteria (Lactobacillus strains). Pasteurized canned versions are bacteria-free due to heat treatment. For probiotics, look in the chilled section and check for 'lacto-fermented' or 'raw/unpasteurized' on the label.

How much omega-3 is in a serving of smoked mackerel?

About 150 g of smoked mackerel delivers roughly 3 g of EPA/DHA, one of the highest concentrations among everyday fish. That comfortably covers the weekly omega-3 target for heart health (recommended: 250 to 500 mg EPA+DHA per day) in a single serving.

Can I swap the sour cream for Greek yogurt?

Yes. Greek yogurt (10 % fat) has less fat than sour cream but more protein and also contains probiotics. Carbs go up slightly to about 5 to 6 g net carbs. Greek yogurt makes the bowl fresher and a bit more tart.

Is this bowl also suitable for meal prep?

Yes, with one caveat: store the components separately. Sauerkraut will turn the sour cream watery within hours on contact. Kept apart, everything lasts 3 to 4 days in the fridge, assemble only at serving time.
