Why these bites suit keto well

Classic cheesecake fails on keto at two points: the sugary base and the sugar in the filling. Both are replaced here. Almond flour has approx. 5 g net carbs per 100 g instead of the 70 g in wheat flour, and it additionally supplies protein and healthy fats. Butter binds the base without baking. Cream cheese contains under 3 g carbs per 100 g and is the classic raw material for a New York cheesecake. Erythritol, a sugar substitute, has practically zero glycemic index and is largely excreted unchanged - no effect on blood sugar. Raspberries, at approx. 4 to 5 g net carbs per 100 g, are among the lowest of the berries and suit cheesecake well. Per 2 bites that works out at around 30 g fat, 7 g protein and 2 g net carbs - a filling snack that will not endanger ketosis.

Erythritol as a sugar substitute: what to watch for

Erythritol is a sugar alcohol that occurs naturally in small amounts in fruit. It is 90 percent excreted unchanged via the kidneys and has no effect on blood sugar or insulin levels. At this quantity (2 to 3 tbsp per recipe) it causes none of the digestive complaints that other sugar alcohols such as sorbitol can. For more intense sweetness, a teaspoon of stevia extract can be added.

An almond flour base without baking: why it works

Butter and almond flour bond into a compact mass as they chill - much like a graham cracker base on a classic no-bake cheesecake. Important: the butter must be melted and cooled, not hot, before it is mixed with the almond flour. The mixture should feel like damp sand and hold together when pressed. If the base is too dry, add a few drops of water or more melted butter.

How do I serve and vary the cheesecake bites?

Serve the bites straight from the fridge - they hold their shape best at refrigerator temperature. From experience I recommend silicone molds rather than paper cases: the bites can then be lifted out without damage. The cream cheese filling can be flavored however you like - vanilla, lemon zest, cocoa or matcha all work well.

Meal prep: shelf life and storage

The bites keep for 4 to 5 days well covered in the fridge. They can also be frozen for up to 3 months: freeze them individually on a tray, then transfer them to a container. Thaw overnight in the fridge. Perfect for prepping for the whole week - two pieces with coffee each day.

Variations: chocolate, matcha and lemon

Chocolate version: stir 2 tbsp unsweetened cocoa powder into the cream cheese filling. Lemon version: use more lemon zest and juice instead of the vanilla. Matcha version: stir in 1 tsp matcha powder for a more intense green color and a lightly bitter note. All variations stay low in net carbs.

Which tips help with the keto cheesecake bites?

  • Bring the cream cheese to room temperature before stirring - cold cream cheese stays lumpy and will not go smooth.
  • Let the butter cool before mixing it with the almond flour - butter that is too hot makes the mixture oily rather than compact.
  • Press the base down firmly with the back of a spoon or the base of a shot glass - a loose base crumbles when you lift the bites out.
  • Chill for at least 1 hour, ideally overnight - the longer, the firmer the base.
  • Press the raspberries (or other berries) on only once the filling is already in the mold, not stirred in beforehand.

FAQ

Can I replace the erythritol with xylitol?

Yes, xylitol has a sweetening power similar to sugar and works well as a substitute. Important: xylitol is toxic to dogs, so store it accordingly if you have pets. Erythritol causes fewer digestive problems for most people than xylitol. Neither has any meaningful effect on human blood sugar.

Which berries are suitable for keto desserts?

Raspberries (around 4 g net carbs per 100 g), blackberries (around 4.3 g), strawberries (around 5.5 g) and blueberries (around 9.5 g) - in ascending order of carb content. For strict keto, raspberries and blackberries suit best. Strawberries work well in moderation. Blueberries should be used sparingly.

Can I bake the bites as well?

For a firmer texture the almond base can be baked for 10 minutes at 170 degrees Celsius before the cream cheese filling goes on. The filling then goes on only once the base has cooled completely. That gives a crisper base but is more work than the no-bake version.

Is the cream cheese filling safe without baking?

Yes, since pasteurized cream cheese is used, no heat treatment is needed. The bites keep for 4 to 5 days well chilled. Do not store them at room temperature - cream cheese should always stay below 8 degrees Celsius.
