Duck breast is one of the few poultry cuts that carries plenty of fat right under the skin, making it ideal for a ketogenic main course. This version reworks the classic duck and orange pairing in a keto-friendly way: only the zest, no juice and no flesh. Note that oranges are high in carbs, so we use just a small amount of zest for aroma. Per serving: 3 g net carbs, 34 g protein, 38 g fat.

Preparation

Score the skin of the duck breast in a diamond pattern without cutting into the meat. Place skin-side down in a cold pan and render over medium heat for 8 minutes. Spoon off the rendered fat from time to time. Turn and sear for 4 minutes, then baste with butter, thyme, and orange zest. Finish in the oven at 160 °C (320 °F) for another 6 minutes. Rest for 5 minutes before slicing.

Why duck breast fits keto

Duck breast with skin contains roughly 17 g fat, 18 g protein, and 0 g carbs per 100 g, an almost ideal keto fat ratio. The zest of half an organic orange adds aroma through essential oils but virtually no carbs (under 0.5 g). Whole oranges are high in carbs and not keto-friendly, so use only small amounts of zest or orange extract. Thyme and butter round out the profile without adding net carbs.

How can I vary the dish?

Instead of orange zest, untreated lemon or lime zest works just as well. If you like, add a hint of star anise or freshly ground black pepper. For a sweet-citrus glaze, deglaze the pan with a splash of red wine, a little broth, and a teaspoon of erythritol to keep it keto. Cauliflower mash with butter or savoy cabbage seared in duck fat make great sides. Alternatively with chicken or turkey: Place a chicken breast with skin (180 g) skin-side down in a cold pan as well, but sear for only 5 minutes on the skin side and 2 minutes on the meat side, since chicken has less subcutaneous fat and cooks faster. Then finish in the oven at 170 °C (340 °F) for just 4 minutes (internal temperature 70 °C / 158 °F). Sear a skinless turkey breast (180 g) in 2 tbsp butter for 4 minutes all around and finish at 170 °C (340 °F) for 6 minutes. Since turkey is lean, increase the butter to 25 g to preserve the fat profile of the meal.

Tips for the perfect duck breast

  • Always start in a cold pan, that is the only way the skin gets truly crispy and the fat can render slowly.
  • Score the skin in a diamond pattern only, not the meat, otherwise the breast will dry out.
  • Work with internal temperature: 56 °C (133 °F) pink, 60 °C (140 °F) medium, above 65 °C (149 °F) the breast turns tough.
  • Save the rendered duck fat from the pan, it is perfect for searing savoy cabbage or kohlrabi.
  • Use only organic orange zest, since conventional peels are treated with pesticides.
