Cloud bread, also known as "oopsies", is an airy bread substitute made from just three ingredients: egg, cream cheese and a little salt. The whites and yolks are whipped separately, then gently combined and baked. The result: snow-white, soufflé-like rolls with about 0.5 g of carbs each. Topped with cream cheese, smoked salmon and dill, it turns into an elegant keto breakfast. Per serving (2 cloud breads): 2 g net carbs, 22 g fat, 26 g protein.

Preparation

Preheat the oven to 160 °C (top/bottom heat) and line a baking sheet with parchment paper. Separate 3 eggs. Whip the egg whites with a pinch of salt until stiff. Stir the yolks together with 60 g of cream cheese (at room temperature) until smooth. Fold the stiff egg whites into the yolk and cream cheese mixture in two batches, do not stir, but fold with a spatula so the air is preserved. Spoon four flat circles (approx. 10 cm) onto the parchment. Bake for 22 to 25 minutes until the cloud breads are golden and firm. Let them cool on a wire rack. Spread two cloud breads with 1 tbsp of cream cheese each and top with 60 g of smoked salmon and fresh dill.

Why cloud bread fits keto

Regular bread contains about 18 to 22 g of carbs per slice (40 g), which is more than many keto daily plans allow in total. Cloud bread uses no grains at all. Per piece (approx. 25 g) net carbs are around 0.5 g, with just under 4 g of protein and 4 g of fat. Smoked salmon delivers high-quality protein and omega-3 fatty acids: about 25 g of protein and 4 g of fat per 100 g. Cream cheese (60 g) adds creaminess and approx. 18 g of fat.

How can I vary the cloud bread?

Instead of smoked salmon, smoked trout, mackerel or tuna spread work well. Vegetarian: top with 2 slices of hard-boiled egg, avocado slices and chives. Breakfast classic: cooked ham with mustard and a pickled gherkin. Sweet version: stir 1 tsp of erythritol into the mixture instead of salt and add a pinch of vanilla. After baking, spread with mascarpone and berries. For more stability in the batter, 1 tsp of psyllium husk powder or 1/4 tsp of baking powder can help, this is not traditionally included but gives extra structure.

Tips for foolproof cloud bread

  • Separate the eggs while they are fridge-cold, the whites come away more cleanly.
  • The egg whites must be truly stiff (flip the bowl upside down, nothing should move). Otherwise the batter collapses.
  • Use cream cheese at room temperature, otherwise it clumps when folded in.
  • Fold gently, do not stir, every unnecessary stroke costs air.
  • Do not overbake: 22 to 25 minutes is enough, otherwise the cloud breads turn bone-dry.

How long does cloud bread keep?

Best eaten fresh out of the oven. In an airtight container in the fridge cloud breads last 2 days, but turn rubbery. A quick toast crisps them up again.

Can I freeze cloud bread?

Yes, in a freezer container with parchment paper between the pieces. Thaw and warm them in the toaster or at 150 °C in the oven for 5 minutes.

Can you taste the egg in cloud bread?

A little, especially the yolk. With a bold topping like smoked salmon, sharp cheese or salami you barely notice it. If you want an egg-free bread, go for almond-flour-based recipes instead.
